Leviticus 11:46-47
“This is the law of the beasts, and of the fowl, and of every living creature that moveth in the waters, and of every creature that creepeth upon the earth: To make a difference between the unclean and the clean, and between the beast that may be eaten and the beast that may not be eaten.”
Kosher Symbols
If you see a kosher symbol or certification you can be mostly sure that it doesnt have pork or shellfish in it. You can not trust this entirely due to the principles of those who certify it however. While mainly derived from Scripture, "Kosher" in modern commercial standards is also comprised of tradition and interpretation derived from sources other than Scripture. One example is the kosherization of duck. Jews consider it kosher while it is not a biblical clean food.
Also, just because it does not have a kosher symbol on it does not mean it is unclean. Companies pay for kosher certification in hopes that it will help them in receiving more business. Some companies on the other hand do not pay for this service, but that does not mean that the food is unclean, this is found in more “generic” brand named foods.
Kosherization also forbids the combination of dairy product and meat. So this may be another reason why many foods that contain clean meat and dairy products are not koshered, such as cheese that is made with an enzyme called rennet, produced from a calves’ stomach; kosher cheese is made with vegetable rennet.
